Project “RECOVERY OF BONE POWDER FROM SALMON BY-PRODUCT AND APPLICATION IN PRODUCTION OF TRA CATFISH CAKE “: Use different approaches to utilize backbone of salmon which is considered as by-product in sushi making process. Make a comparison between several methods which separate the fish’s backbone from excess meat such as enzyme hydrolysis and NaOH one. Conduct several experiments to find the best conditions of hydrolysis. When optimal conditions are found, I tried to yield the fish bone powder and analysed the calcium contents as well as other nutrients in this powder. Apply the powder in catfish cake in different proportions to find which one is the best options and also took various sensory evaluation tests to find out if it had met market demand or not.
